Simple Vanilla Frosting:
I doubled this recipe, because there’s nothing worse than running out of frosting!
- 1 cup (2 sticks) unsalted butter, softened
- 6 to 8 cups confectioners’ sugar
- 1/2 cup milk
- 2 teaspoons vanilla extract
Place the butter, 4 cups of the sugar, milk, and vanilla into a large mixing bowl. On the medium speed of an electric mixer, beat until smooth and creamy (about 3 to 5 minutes). Add the remaining sugar, 1 cup at a time. Beat well after each addition for about 2 minutes, until the icing is “creamed” and thick enough to spread easily.

1. Fondant
This was my first time using fondant. I was both nervous and excited! I didn’t make it from scratch; instead, I bought Wilton’s already made fondant. It was super easy — I just had to follow the directions. After coverering the cakes with the fondant, I measured some dowel rods and stuck them into the bottom two layers. Then, I carefully assembled the cakes on top of each other.
