Recipe File: Corn With Sage & Brown Butter

We’re a couple days out from Thanksgiving. Believe us, we’re just as shocked as you are! That’s why we’re on the hunt for super simple but insanely delicious recipes for this year’s table. Yes, we’re excited about turkey, but truly, isn’t Thanksgiving all about those tasty side dishes? Mashed potatoes, homemade cranberry sauce, a shredded Brussels sprouts salad and this killer corn dish are all on our list. With only four ingredients, this one is a snap to pull together and the presence of brown butter guarantees you stardom at any turkey day fete.

FRESH CORN WITH SAGE & BROWNED BUTTER

Makes 1 dish.

INGREDIENTS

4 cups corn kernels, fully defrosted
4 tablespoons salted butter
1 1/2 tablespoons chopped fresh sage, plus more for garnish
freshly ground black pepper

INSTRUCTIONS

Heat a medium sized saucepan on medium low heat. Place the butter in the pan and let melt, swirling gently. Watch the butter closely as it cooks. It will foam, and then begin to brown. The butter is ready once it takes on a nutty aroma and you notice small brown bits forming at the bottom of the pan. At this point, add in the sage and whisk to combine. Add in the corn and pepper and stir gently to combine. Cook until fully heated through. Serve immediately.

Note: This recipe can easily be double, tripled, and so on! For every cup of corn add in one tablespoon of butter and a teaspoon of chopped sage.
