Unlike fall and winter varieties, summer squashes are selected to be harvested before the rind hardens and the fruit matures. Look for ones that feel heavy for their size and have shiny, unblemished rinds. Avoid oversized ones and those with hard rinds (this may indicate an over-mature squash). And now, for the recipes!
