A Week Of Light Meals To Try

This time of year, most of us feel full to the brim from all of the decadent holiday fare and are ready to lighten up the menu at home. We’ve rounded up some of our favorite light meals — 3 breakfasts, 3 lunches and 3 dinners — that are hearty enough for winter meals, and wholesome enough to get you back to feeling like yourself.   • For Breakfast

    Baked Eggs in Avocado
    With only two ingredients (plus salt and pepper!), and no prep time, this meal is super easy to make before heading out in the morning, and is also pretty enough to serve on the weekend for brunch.

    This vegetarian breakfast is a hearty, healthy choice for weekend breakfasts or long mornings when you have some extra time. Plus, it can easily be made vegan with a non-dairy pesto.

    Mix this meal up at night, and enjoy in the morning with your favorite toppings. We love peanut butter on ours for a boost of protein that doesn’t leave us feeling heavy.

    This wholesome and tasty chowder is easy to make at home and bring to the office. Just zap it in the microwave and enjoy!

    Make a big batch of this at the beginning of the week and separate it into easy lunch portions to grab when you leave the house in the morning, keeping it undressed until you’re ready to eat.

    A super healthy, veggie-packed meal that can be served hot or cold and can easily be made vegan if you swap out the chicken stock for vegetable broth. Easy!

    Boring cauliflower and broccoli are no more thanks to this roasted bowl, packed with antioxidants and fiber. We love the roasted chickpeas, too!

    Mexican food lovers rejoice! Brown rice, garlic, roasted corn and peppers, black beans, cilantro, spicy fish and a ton of heart-healthy avocado combine to make this delicious bowl.

    Salmon and Zucchini in Parchment
    We love how hands-off this recipe is — just wrap all the ingredients up in parchment, pop it in the oven for approximately 15 minutes, and dinner is served. Serve with a simple side salad of greens and balsamic vinaigrette for an extra boost of veggies.
