On The Grill: Fig Jam + Arugula Pizza

Today we are excited to kick off a summer grilling series! Over the next two months we’ll be sharing our favorite recipes to cook on the grill — from classic BBQ essentials to unique desserts and appetizers. While pizza is often thought of as a cold-weather comfort food, it’s also perfect for summer entertaining. And this sweet-and-salty hybrid is one we’ll be going back to time and time again!

  • Pizza dough
  • Pizza stone & pizza peel
  • Cornmeal
  • Flour
  • Fig jam (we like Trader Joes’)
  • Fontina cheese
  • 1/2 small onion
  • Olive oil
  • Arugula
  • Prosciutto


1. Thinly slice the onion. Add 2 tbs of olive oil to an iron skillet and cook onion over low heat for about 30-40 minutes until it caramelizes.
2. Flour your counter or pastry board. Flatten pizza dough into a round disc. Place a cold pizza stone on your grill and pre-heat it.
3. Cover a pizza peel with a thick layer of cornmeal. Transfer crust onto the peel.
4. Top crust with fig jam, shredded fontina and caramelized onions.
5. Slide pizza onto stone on hot grill. Bake until cheese is bubbly and crust is golden (roughly 12-15 minutes). The time will vary depending on the heat and your grill.
6. Top with arugula and slices of prosciutto.

    Made this for dinner the other night, it was so easy and delicious! Plus we were able to get all the ingredients at Trader Joe’s.

    I had always looked with doubt on fruit pizzas, but I will definitely have to try this one straight from the grill. It simply intrigues me, how it will taste like – although I will leave the prosciutto out :)
