Nothing says autumn quite like the abundance of apples that appears this time of year. As soon as there’s a chill in the air, I head to my local farm stand to pick up some fresh apple cider. I heat it up with a cinnamon stick for a comforting fall drink, add a splash of it to weekend mimosas and even use it to flavor salad dressings. I had fun creating this seasonal-inspired cocktail, which I named after our dog, Sullivan, and served at my wedding last September!
The Apple Sullivan Cocktail
- Fresh apple cider
- 1 ½ ounces spiced rum
- 1 teaspoon thyme-flavored simple syrup
- Splash lemon juice
- Sparkling wine or Champagne
- A few apple slices and sprigs of thyme (for garnish)
Combine cider, rum, simple syrup and lemon juice in a shaker. Pour over ice and top with sparkling wine or Champagne. Garnish with thyme and apple slices.
