If you haven’t noticed on Instagram, Pinterest or the blogosphere in general, smoothie bowls are the latest craze. Forget green juice, we are all about these spoon-able and healthy concoctions. The best part about smoothie bowls? You can get as creative and adventurous as you want depending on what you have in the freezer and your fruit bowl! Today, Caitlin is sharing her easy “recipe,” which combines mango, açai berries and banana for the base and frozen blueberries with coconut on top!
“I love this smoothie bowl for weekday mornings because it’s easy to whip up, but keeps me full for a few hours. Sometimes, I add a little spinach to pack in a few more greens to my day and get creative with the toppings. If I’m feeling a little more indulgent, I’ll add a scoop of sweetened granola.”
Mango Açai Smoothie Bowl
1 100-gram frozen pack of açai berries
1 small banana
1/2 cup frozen mango
1/2 cup coconut milk (or almond milk or water)
1/2 cup frozen blueberries
2 tablespoons shredded unsweetened coconut
Seeds and nuts of your choice*
- Run water over the pack of frozen açai berries until they are softened but not thawed.
- Combine mango, açai, banana and coconut milk in a blender and puree until smooth, adding more milk if it’s too thick. Keep in mind you want to be able to eat with a spoon, not a straw!
- Pour into a bowl and top with blueberries, coconut and seeds.
*We used a blend from Trader Joe’s that contains chia, hemp, flax and more.
