Quick Bourguignon Recipe
By using a good quality of steak, this traditionally long-cooking French stew cooks in just 20 minutes making it the perfect weeknight comfort food. Be sure to also use a good quality red wine for this dish. Because you only use a bit in the dish, you’ll have the remaining to drink with your dinner.
- 1 cup pearl onions
- 1 cup sliced carrots
- 1.5 pound sliced sirloin steak
- 4 tablespoons butter
- 4 tablespoons flour
- 2 cups chopped potatoes
- 1½ cups red wine
- 4 cups beef stock
- 6 sprigs fresh thyme
- salt and pepper
Step 1: In a large dutch oven, brown meat, carrots and onions until browned on all edges and a little crispy.
Step 2: Remove everything from the pan and set aside. Melt butter into the pan and scrape up the brown bits.
Step 3: Add flour and whisk together until combined. Slowly add the wine and whisk. Boil a few minutes until the wine has reduced by half.
Step 4: Return meat, carrots and onions back to the pan. Pour stock in the pan and bring to a boil. Reduce heat, cover and cook until meat is cooked through—about 15 minutes.
