St. Patrick’s Day Cocktail: Pot Of Gold

Victoria from vmac+cheese again, back to share a St. Paddy’s Day inspired cocktail that’s easily drinkable year round (and if chugging scores of green beer this weekend isn’t your thing, this is definitely the recipe for you!). When I was brainstorming different concoctions to share today, the obvious thought was to go with something green. Then I realized gold was a perfectly acceptable color compliment for St. Patrick’s Day, and of course, one that any Glitter Girl will gladly embrace!

This Champagne cocktail becomes Irish with the addition of a splash of whiskey. With a little fresh pear juice and lemon, it’s perfectly palatable and not too rough around the edges. I’m hosting a St. Paddy’s Day get together this Saturday, and plan on making the pear juice/Irish whiskey mix ahead of time. Then, guests can simply add a bit to their glass, and top it off with the bubbly. Simple, festive, and just Irish enough. Happy St. Patrick’s Day!

Pot of Gold
Serves 2
-2 tbsp fresh pear juice mix (see below)
-2 tbsp Michael Collins Irish whiskey
-Sparkling wine or Champagne of your choice
-Lemon twist for garnish

Mix the pear juice and the whiskey together in a liquid measuring cup or some other cup that has a spout, which will make it easier to pour. Divide the mixture equally between two Champagne flutes. Slowly top with bubbly, then garnish with a lemon twist. Enjoy!

For the pear juice mix:
-2 ripe d’anjou pears, peeled, cored, and diced
-4 tbsp water
-2 tsp fresh lemon juice

Place all the ingredients into a food processor and run the machine until the mixture is pureed. You may need to stop and scrape down the sides a few times to get the mixture smooth. Place a fine mesh strainer or sieve over a non-reactive bowl, then pour the mixture in. Allow the juice to drain out, stirring the puree gently to help the process along. Store in the refrigerator until you’re ready to use. The mixture may brown a bit, but it’s still good!
